Corn is arguably summer’s best produce. Golden, juicy, and bursting with flavor, it’s delicious even when only boiled. Imagine how much better it gets when prepared with more ingredients. Whether you’re craving sweet, salty, or savory, this collection of corn recipes has something for everybody. Here’s a bonus – some of these recipes don’t even require fresh corn. They’ll taste phenomenal even if you use frozen or canned. That means you can whip these up any day of the year. These recipes may be corny, but they’ll definitely shuck you.

Whether it’s a pudding or a casserole, it doesn’t matter. All you’ll care about is how delicious this dish is. The great thing about this recipe is that you can use either fresh or canned corn kernels. That means you can make it anytime a craving strikes. It also means you can serve this as a side to your Thanksgiving and Christmas feasts.

5. Mexican Cornbread 

There’s absolutely nothing wrong with regular cornbread, but I urge you to give this Mexican version a try. Give the classic bread a savory and spicy spin! This quick and easy Jiffy recipe has you covered. Yup, you’ll use a boxed mix for this one, but don’t worry, you can expect nothing but homemade deliciousness.  Adding a flavor contrast to the sweet cornbread batter are jalapenos, green chilies, and cheese. It will absolutely knock your socks off.

6. Mexican Street Corn Salad 

Here’s another Mexican treat you surely won’t want to miss! This Mexican street corn salad is a fun take on elote, or Mexican street corn. The idea is simple. Instead of using corn on the cob, the kernels are shucked and served in a bowl.  All the elote flavors and textures are there – corn, mayo, Cotija cheese, scallions, cilantro, chili powder, and jalapenos. The difference is, with this recipe, your favorite elote has never been easier to eat.

7. Chocolate Cornstarch Pudding

For this next recipe, let’s turn the spotlight from corn to chocolate. This chocolate pudding is outrageously rich and decadent. The combination of cocoa powder and sugar makes the chocolate flavor so on point! But what gives its flawless consistency is the cornstarch. Thanks to this thickening agent, the chocolate pudding is ridiculously smooth and silky. It’s maximum lusciousness, for sure.

These corn fritters are so delectable, it’s impossible to stop at one. Seriously, if you’re on a diet, I do not recommend these. If you don’t mind the calories, by all means, indulge! These fritters are crispy and crunchy on the outside, and soft and bursting with corn kernels on the inside.  Because you’ll use the ever-dependable Bisquick mix for its batter, making these fried cakes couldn’t be easier.

9. Arroz con Maiz (Rice with Corn) 

For the ultimate hearty side dish, look no further than arroz con maiz. This dish of fried rice and corn is the stuff of legends! I can’t get enough of the texture combination. The crunchy, juicy kernels mixed with the soft and fluffy rice are pure perfection. The corn also adds sweetness to the otherwise tasteless rice. Finishing it off is a garnish of green onions. They’ll add a pop of color and a delicious, earthy flavor. Pair this dish with any meaty entree, and lunch or dinner is ready.

10. Corn Chowder 

This corn chowder is flavor overload! I’m talking crunchy corn kernels, starchy potatoes, smoky bacon, and salty cheese.  If you’re looking for the ultimate comfort food, this is it right here. If you’re feeling blue, one bowl of this hot and creamy chowder will be enough to cheer you up. You’ll definitely want more, though, so I suggest you make more. Whether you use fresh, canned, or frozen corn, it doesn’t matter. Your chowder will still be a winner.

11. Corn Cookies  

Chocolate chip cookies are awesome, but these corn cookies are also just as delectable. If you want that crunchy-chewy texture combo, these cookies will get you hooked. If you check online, you’ll find Momofuku Milk Bar’s recipe at the top. I have nothing against it, but it does call for powdered freeze-dried corn. Where on earth can you get that? With this recipe, you’ll only use canned creamed corn, and still get pretty impressive results. You’re welcome.

12. Popcorn Balls 

Looking to elevate your usual popcorn? This recipe is exactly what you’ll need. To say that these popcorn balls are phenomenal is an understatement. Think of them as a cross between caramel corn and a Rice Krispie treat.  They’re crunchy, sticky, and chewy. It also has that wonderful sweet and salty flavor combination going on.  Pro-tip: give the balls a holiday look by sprinkling them with colored sprinkles. How cute!

13. Corn on the Cob 

The great thing about corn is that you can do anything to it, and it’ll still be delicious. In this recipe, all you’ll need is to pop it in the microwave – husk and all. If you think that boiling is the simplest way to cook corn on the cob, think again! Using the microwave is a much easier and faster way to get the same results.

14. Sweet Corn Panna Cotta  

Panna cotta is a light and delectable dessert that will surely put a wonderful ending to any meal. It’s not only delicious, but it’s easy to make as well. For this sweet corn panna cotta recipe, all you’ll need is 25 minutes. The ingredients are commonly found in the pantry, and the steps are simple. The most difficult part is waiting for the panna cotta to set.

These Jiffy cornbread muffins have the perfect flavor and texture to impress even the snobbiest muffin snob. The secret ingredient? Butter. It transforms the basic cornbread mix into drool-worthy muffins. These golden treats are insanely moist, buttery, and downright delicious. It’s also an easy peasy recipe that even non-experienced bakers can pull off. You really couldn’t ask for more.

This scalloped corn casserole uses a strange ingredient – Ritz crackers. It may seem odd, but the crackers work like magic. Over the centuries, mankind has learned to look to other sources outside of mammals for milk. There’s almond milk, soy milk, coconut milk, and yes – even corn milk.  Called susu jagung, corn milk is a sweet, yellow beverage achieved by cooking corn and milk together. It’s a simple recipe with phenomenal results. It gets bonus points, too, for being super nutritious. It’s a wonderful alternative to your usual non-dairy milk.

19. Chicken Tortilla Soup  

Besides being a fantastic main ingredient, corn is also a great support ingredient to a myriad of dishes. This chicken tortilla soup isn’t complete without those sweet, little golden morsels! Loaded with chicken, corn, beans, cheese, sour cream, and tortilla chips, this soup is the definition of comfort food.  It’s not only delicious but so filling, as well. One bowl is a complete meal on its own. Of course, I won’t judge if you ask for seconds. 

20. Quinoa with Corn and Scallions 

I’m such a sucker for rice and grains, quinoa being one of my favorite ones. I just love the unique, crunchy texture of these tiny little grains. Quinoa is great even on its own, but adding corn kernels to the mix makes it a thousand times better. The color, flavor, and texture contrast make the dish even more exciting. The best part is that the corn adds more nutritional value to the already healthy superfood.

21. Caramel Corn 

There are not enough words to describe how amazing caramel corn is. It’s the best kind of popcorn in my book. It’s crunchy, puffy, sweet, and divine. I don’t care about the sugar and the calories. I can eat this all day. If you think it’s complicated and messy to make, you’re mistaken. In fact, all you’ll need is a bowl, a paper bag, and a microwave.

22. Mexican Buddha Bowl 

This Mexican Buddha bowl is a colorful medley of beans, grains, and vegetables. It looks good and tastes even better. When it comes to Buddha bowls, you’ll never run out of options. As long as you stick to the formula of grains, beans, veggies, and dressing, anything is possible. With a combination of brown rice, sweet corn, black beans, avocado, tomato, hummus, and guacamole, this recipe is a Mexican take on the Asian classic. 

23. Corn Dip  

I’m a big fan of dips, and this one is absolutely one of my favorites. This corn dip is so ridiculously addictive, you’ll want to lick the bowl. At its base is a blend of mayo, cream cheese, and sour cream. From that alone, you can already tell how amazing it is. Making things even more interesting are the mixins. I’m talking peppers, jalapenos, green onions, garlic, and of course, the star of it all – corn kernels. Even if it’s served hot and bubbly, don’t be surprised if it disappears soon after the bowl lands on the table.

24. Peanut Butter Cornflake Cookies 

Let’s move away from actual corn and focus our attention on one of its bi-products. Cornflakes are a popular, crispy-crunchy breakfast cereal served in a bowl with milk.  Cornflakes have far more uses than that, though. In this recipe, you’ll combine this delightful treat with corn syrup and peanut butter to make decadent cookies. These cookies are unbelievably delicious, and they’re no-bake to boot!

25. White Chicken Chili 

This chili may be all-white, but it will surely delight. Instead of the usual ingredients, you’ll use chicken, corn, beans, chili peppers, sour cream, and lots of cheese. So you see, even though there’s no ground beef involved, this chili is still a winner. It’s hearty, delicious, and relatively more nutritious! For extra corn flavor, serve chicken chili with a big slice of cornbread. 

26. Cowboy Caviar 

It may not be as fancy as actual caviar, but I’ll choose this one over the real thing any day. Cowboy caviar is a beautiful medley of beans, veggies, and avocados, tossed in a creamy dressing. It’s technically a dip, but I won’t mind eating it on its own with a spoon. That’s how good it is. You can serve it with tortilla chips for a delicious game-day snack, or use it as a bread filling or topping for a filling breakfast.

27. Skillet-Roasted Corn 

Take the already delicious corn kernels to the next level! All you’ll need are 15 minutes and a skillet. With this recipe, even the canned corn kernels will taste fresh as ever. Flavor the roasted corn with garlic, salt, and pepper, and you’re golden. You can stick to the recipe, or use your favorite herbs and seasonings to flavor the corn for added oomph.

28. Cowboy Crack Dip

Last but not least is the insanely addictive cowboy crack dip. This dip has the power to turn the blandest chips, crackers, and crudites into delectable snacks. This dip is complete with cream cheese, sausage, cheddar cheese, tomatoes, and sweet corn.
